High profile international chef and US TV personality Akira Back will take over the kitchen at Armani/Hashi for two nights this December, as he brings his signature experimental style and love of shared, social dining experiences to Dubai.
His unique brand of gastronomic innovation will take centre stage with a wildly creative nine-course menu paired with hand-selected beverages from our resident sommelier.
Diners will taste an exciting procession of flavours including tuna pizza with winter Alba truffle and ponzu sauce, Korean red snapper with micro shiso and a sweet-spicy chojang sauce, duck prosciutto with micro arugula, Kobe beef short rib accompanied by fingerling potatoes and the intriguingly named edible Seoul Garden, for a one-of-a-kind dining experience.
A former professional snowboarder who swapped the slopes for the stove, Korean born-US raised Chef Akira graduated from the International Culinary School at The Art Institute in Colorado in 1993 and worked his way up through the ranks at kitchens in Aspen, Texas and Hawaii before heading overseas to broaden his culinary credentials.
Extensive travels throughout Europe and Japan, as well as across the US, saw him study under top celebrity chefs and industry leaders, working with grand masters of Japanese and Asian cuisine including Masaharu Morimoto, Nobu Matsuhisa and Bryan Nagao.
“I am, by nature, an adventurer, and this is reflected in my approach to food and innovation. I love to experiment and for me it’s all about creating culinary experiences based on a melting pot of influences but with a fundamental focus on the roots and traditions of Japanese culture,” said Chef Akira.
With a reputation for bringing a sense of adventure and unbridled creativity to his culinary creations, Chef Akira’s growing portfolio of acclaimed dining destinations include two in Las Vegas – Kumi Japanese Restaurant at Mandalay Bay and the famed Yellowtail Japanese Restaurant & Lounge at the Bellagio hotel – as well as Akira Back New Delhi, Akira Back Jakarta and the recently launched Yellowtail on Sunset Boulevard in Los Angeles.
Chef Akira’s nine-course menu will be available on December 8 and 9, 2014. AED 600 per person, exclusive of beverages.
